  • ½ cup vegetable oil

Chicken Marinade:

  • 700 grams bone-in and skinless chicken thighs and drumsticks
  • ¾ cup yogurt or hung curd
  • ¼ cup tomato puree
  • ¼ cup vegetable oil
  • 1 tablespoon minced ginger-garlic paste
  • 1 tablespoon red chili powder (substitute with 1 teaspoon paprika + 1 teaspoon cayenne)
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 2 tablespoons brown onions (from earlier)
  • 1 ¼ teaspoon salt


  • 2 tablespoons hot milk
  • 10-15 saffron strands

Parboiled Rice (70% cooked):

  • 2 cups basmati rice
  • 6 cups water
  • 2 tablespoons salt
  • 1 bay leaf
  • 5-6 cloves
  • 2-3 cardamom pods

Other Biryani Ingredients:

  • 1 cup fresh mint leaves
  • 1 cup coriander leaves (cilantro)
  • 1 ½ tablespoons ghee or butter

To Serve:

  • Crispy brown onions
  • Onion raita


1. Prepare the Brown Onions:

  • Pat the onions dry and leave them on a kitchen towel for 15-20 minutes to slightly dry them out.
  • Heat vegetable oil in a pan and add the onions. Shallow fry them on medium flame for about 15 minutes until they turn deep golden brown. Ensure they don't burn.
  • Drain the fried onions on a paper towel and set them aside. You can also use store-bought fried onions or shallots as an alternative.

2. Marinate the Chicken:

  • In a bowl, combine all the ingredients listed under chicken marinade. Mix well.
  • Add the chicken pieces to the marinade and coat them thoroughly.
  • Allow the chicken to marinate for at least two hours, or for best results, refrigerate overnight to enhance the flavors.

3. Soak Saffron and Prepare Rice:

  • In a small bowl, soak saffron strands in hot milk. Gently rub them with the back of a spoon to release their color and aroma. Set aside.
  • In a large pot, bring water to a boil. Add salt, bay leaf, cloves, and cardamom pods.
  • Add the basmati rice to the boiling water and cook for exactly 5 minutes. The rice should be about 70% cooked. Drain the rice, leaving the whole spices in it.

4. Layering and Cooking Chicken Biryani:

  • Heat a heavy-bottomed pot or Dutch oven.
  • Place the marinated chicken in the pot and cook for 4 minutes. Flip the chicken pieces and cook for an additional 3 minutes. Turn off the heat.
  • Sprinkle half of the fried onions over the chicken, followed by the fresh mint and coriander leaves.
  • Layer the partially cooked rice evenly over the herbs.
  • Drizzle the saffron milk and ghee over the rice.
  • Cover the pot and cook on low heat for 20 minutes. This will allow the rice to steam, cook to perfection, and infuse the flavors of the chicken and spices.
  • After cooking, let the biryani rest for 5-10 minutes to allow the flavors to meld together.
  • Finally, garnish with the remaining crispy brown onions.
